Hawaiian-Style Ahi Poke Bowl with Brown Rice
Cubed sushi-grade ahi tuna marinated in sesame-soy sauce over brown rice with cucumber, edamame, and avocado — a fresh, protein-rich bowl.
Poke has become a favorite well beyond Hawaii's shores, and it's easy to see why: cubes of fresh, sushi-grade tuna marinated in a simple soy-sesame sauce, served over rice with a mix of cool, crunchy toppings.
Raw tuna is an excellent source of lean protein with essentially no added fat of its own, and building the bowl on brown rice instead of white adds a bit more fiber to the mix. The edamame and avocado round out the bowl with plant protein, fiber, and healthy fat in modest amounts, so the whole thing stays satisfying without becoming calorie-heavy — a great fit for a lighter lunch or dinner.
Only use tuna labeled sushi- or sashimi-grade for this dish, and keep it well chilled until you're ready to eat.
Ingredients
Most ingredients here are everyday market staples across West Africa. A handful of specialty items may be easiest to find at a local open-air market or an African grocery store if you're elsewhere.
