Oily fish doesn't get much simpler than this — a quick turmeric-and-garlic rub, a hot grill, and a soft garden egg sauce standing in for anything starchy.

Mackerel is naturally rich in the kind of fat found in fatty fish, which pairs here with a sauce built almost entirely from garden eggs — African eggplants that mash down low in carbohydrate and high in fiber. Turmeric shows up in both the fish rub and isn't just decorative; it's used the way many diabetes-friendly recipes lean on it, alongside ginger, as part of a milder-spiced approach to flavor. On its own, this plate stays genuinely low-carb; the recipe suggests unripe plantain, millet, or brown rice only as an optional, portion-controlled side.

Let the fish rest a couple of minutes off the grill before plating, so the juices settle back in before you cut into it.

Ingredients

  • 2 medium-sized fresh mackerelcleaned, gutted, cut into fillets or steaks

  • 4 –5 garden eggsAfrican eggplants – boiled and peeled
  • 1 medium onionchopped
  • 2 tbsp crayfishground, optional
  • 1 tbsp olive oil or canola oil
  • 1 small fresh tomatoblended, optional for mild flavor
  • 1 chili pepperoptional, if tolerated
  • 1 handful spinach or scent leaveschopped, for freshness
  • Pinch of salt to taste

Instructions

  1. 1Prepare Mackerel:
  2. 2Rub fish with olive oil, garlic, ginger, turmeric, black pepper, and a little salt.
  3. 3Grill on a charcoal grill, oven grill, or non-stick pan for 5–7 minutes per side until golden and cooked through.

  5. 5Boil garden eggs until soft, peel, and mash/blend into a coarse paste.
  6. 6Heat olive oil in a pan, sauté onions until fragrant.
  7. 7Add blended tomato and chili, cook for 5 minutes.
  8. 8Stir in crayfish, mashed garden eggs, and simmer for 10 minutes.
