Sweet potato fries need surprisingly little to taste good: a coat of olive oil, a good amount of salt and pepper, and a hot oven that lets the edges crisp up while the inside stays soft. Cutting the wedges to a similar thickness helps them cook evenly, so none end up undercooked while others turn crisp.

Because sweet potatoes are naturally free of gluten and nothing here needs flour or breading, this makes an easy side or snack for anyone avoiding wheat. Paprika is optional but adds a little color and warmth if you want more than salt and pepper alone.

Flip the fries halfway through baking so both sides get a chance to crisp, then serve them hot straight off the tray.

Ingredients

  • 2 large sweet potatoespeeled and cut into fries
  • 1 tablespoon olive oilor any preferred cooking oil
  • 1/2 teaspoon saltto taste
  • 1/4 teaspoon black pepperfreshly ground
  • 1/2 teaspoon paprikaoptional, for flavor

Instructions
