Ginger-Garlic Chicken and Shiitake Mushroom Salad with Sesame Dressing
A warm Asian-inspired salad of seared chicken, garlicky shiitake mushrooms, and crisp vegetables in a ginger-sesame dressing.

This salad takes its cue from Chinese home cooking, where garlic, ginger, and shiitake mushrooms are practically a trio. Both aromatics are common in immune-supportive cooking, and here they're sautéed hard alongside the mushrooms so every bite of the salad carries that savory depth.
Sliced seared chicken sits on a bed of mixed greens, shredded carrot, and red bell pepper for a good dose of vitamin C, all pulled together with a simple sesame-ginger dressing whisked with rice vinegar and a little tamari. It's substantial enough to be lunch on its own.
Serve it warm, right after the chicken and mushrooms come off the heat, so the greens wilt just slightly under the hot topping. A scatter of sesame seeds and scallion finishes it off.
