Garlic & Spinach Stir-Fried Rice
Day-old brown rice stir-fried with garlic, spinach, and a light soy glaze — a quick, vegetable-forward side or light meal.
Ingredients
- 2 cups cooked brown rice cooled, ideally from the previous day
- 2 cups fresh spinach roughly chopped
- 4 garlic cloves minced
- 1 small onion finely chopped
- 1 tablespoon olive oil or sesame oil
- 2 teaspoons low-sodium soy sauce or tamari
- 1 teaspoon freshly ground black pepper
- 1 teaspoon grated ginger optional
- Salt to taste
- Sesame seeds for garnish, optional
Instructions
- Heat olive oil in a wok or large skillet over medium heat.
- Add minced garlic and onion; sauté until fragrant and golden (about 1–2 minutes).
- Stir in the chopped spinach and cook until wilted (2–3 minutes).
- Add cooked brown rice and toss well to combine.
- Drizzle in soy sauce, add black pepper (and ginger if using). Stir-fry for 3–4 minutes until heated through.
- Adjust seasoning with salt as needed.
- Garnish with sesame seeds and serve hot.
