Garlic & Spinach Stir-Fried Rice

Day-old brown rice stir-fried with garlic, spinach, and a light soy glaze — a quick, vegetable-forward side or light meal.

Ingredients

  • 2 cups cooked brown rice cooled, ideally from the previous day
  • 2 cups fresh spinach roughly chopped
  • 4 garlic cloves minced
  • 1 small onion finely chopped
  • 1 tablespoon olive oil or sesame oil
  • 2 teaspoons low-sodium soy sauce or tamari
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon grated ginger optional
  • Salt to taste
  • Sesame seeds for garnish, optional

Instructions

  1. Heat olive oil in a wok or large skillet over medium heat.
  2. Add minced garlic and onion; sauté until fragrant and golden (about 1–2 minutes).
  3. Stir in the chopped spinach and cook until wilted (2–3 minutes).
  4. Add cooked brown rice and toss well to combine.
  5. Drizzle in soy sauce, add black pepper (and ginger if using). Stir-fry for 3–4 minutes until heated through.
  6. Adjust seasoning with salt as needed.
  7. Garnish with sesame seeds and serve hot.
