Roasting whole cloves of garlic alongside the beets mellows them into something sweet and spreadable, which gets mashed right into the dressing. Spooned over a bed of cool labneh and finished with fresh mint, this makes a lovely light lunch or a shareable starter.

Beets and garlic are the two ingredients doing the heavy lifting here, both ones we reach for in liver-friendly cooking, and the portion of labneh stays modest so the beets remain the centerpiece. It's simple enough to make on a weeknight but pretty enough for company.

These ingredients are common at Middle Eastern grocers; a well-stocked international supermarket usually carries them too.
