Garlic-Herb Roasted Chicken with Braised Spinach and Beets
Herb-roasted chicken breast served over spinach and beets braised in broth and lemon for an easy dinner.
Rubbing chicken breast with garlic, rosemary, and thyme before roasting gives you a lot of flavor for very little effort, and the pan drippings do double duty as the base for a quick braise of spinach and diced beets. It's an easy dinner that still looks like you put thought into it.
This one is built around garlic and dark leafy spinach paired with antioxidant-rich beets, ingredients we come back to often for liver-friendly cooking, and the sauce is kept light with broth rather than butter or cream. A squeeze of lemon at the table finishes it off.
