Flaxseed-Crusted Baked Salmon with Roasted Broccoli
Baked salmon fillets crusted with ground flaxseed, breadcrumbs, and fresh herbs, served with garlicky roasted broccoli.
A simple crust of ground flaxseed, breadcrumbs, and fresh herbs gives baked salmon a light, nutty crunch without any deep-frying. Roasted broccoli on the side keeps the whole sheet-pan-friendly meal weeknight-easy.
Salmon is one of the best-known sources of omega-3 fats, often mentioned alongside skin-friendly, anti-aging eating patterns, and the flaxseed crust adds its own dose of plant-based omega-3s along with fiber and phytoestrogens — a combination that comes up often in conversations around menopause and midlife nutrition. Broccoli rounds the plate out with vitamin C and fiber of its own.
This comes together in well under 30 minutes and reheats reasonably well, though the crust is at its crispiest fresh from the oven.
