Filipino Sinigang na Isda (Tamarind Fish Soup) with Kangkong

Sinigang is a beloved Filipino soup defined by its sour tamarind broth, brightened further here with fresh ginger and plenty of garlic, both common in immune-supportive cooking, alongside tomatoes and green chili.
White fish poaches gently in the broth until just flaky, keeping the dish light rather than heavy, while kangkong (water spinach, or regular spinach if that's easier to find) wilts in at the very end for a leafy, vitamin-rich finish. Radish adds a mild sweetness and a little more texture to the pot.
The sourness is the whole point — don't be shy with the tamarind. Serve it hot over steamed rice, ladling the broth generously so every bite gets that distinctive tang.
