Fertility-Boosting Grilled Salmon with Quinoa
Grilled salmon fillets served over lemony quinoa with steamed broccoli and cherry tomatoes for a well-rounded dinner plate.
Ingredients
- 2 fillets salmon about 6 oz each, skin-on
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper to taste
- 1/8 teaspoon salt to taste
- 1 cup quinoa uncooked
- 2 cups vegetable broth or water
- 1 cup steamed broccoli florets
- 1/2 cup cherry tomatoes halved
- 1 tablespoon lemon juice freshly squeezed
- 1 tablespoon fresh parsley chopped
Instructions
- Rinse quinoa under cold water. In a medium pot, bring vegetable broth to a boil, add quinoa, reduce heat, cover, and simmer for 15 minutes or until fluffy.
- Preheat grill or grill pan over medium heat. Brush salmon fillets with olive oil and season with garlic powder, paprika, salt, and black pepper.
- Grill salmon skin-side down for 4–5 minutes per side, until cooked through and flaky.
- In a mixing bowl, toss cooked quinoa with steamed broccoli, cherry tomatoes, lemon juice, and parsley.
- Divide quinoa salad between two plates and top each with a grilled salmon fillet.
- Serve warm with extra lemon wedges if desired.
