Ingredients

  • 2 fillets salmonabout 6 oz each, skin-on
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepperto taste
  • 1/8 teaspoon saltto taste
  • 1 cup quinoauncooked
  • 2 cups vegetable brothor water
  • 1 cup steamed broccoli florets
  • 1/2 cup cherry tomatoeshalved
  • 1 tablespoon lemon juicefreshly squeezed
  • 1 tablespoon fresh parsleychopped

Instructions

  1. 1Rinse quinoa under cold water. In a medium pot, bring vegetable broth to a boil, add quinoa, reduce heat, cover, and simmer for 15 minutes or until fluffy.
  2. 2Preheat grill or grill pan over medium heat. Brush salmon fillets with olive oil and season with garlic powder, paprika, salt, and black pepper.
  3. 3Grill salmon skin-side down for 4–5 minutes per side, until cooked through and flaky.
  4. 4In a mixing bowl, toss cooked quinoa with steamed broccoli, cherry tomatoes, lemon juice, and parsley.
  5. 5Divide quinoa salad between two plates and top each with a grilled salmon fillet.
  6. 6Serve warm with extra lemon wedges if desired.
