Diabetic-Friendly Moi Moi with Olive Oil (Blood Sugar Support)
A steamed bean pudding brightened with bell pepper and carrot, made with olive oil and a boiled egg for a protein-rich, low-glycemic bite.
Ingredients
- 2 cups peeled beans black-eyed peas or brown beans
- 1 medium onion chopped
- 1 red bell pepper adds flavor + antioxidants, not spicy
- 1 small carrot adds natural sweetness, low-glycemic
- 2 tbsp crayfish powder optional, for flavor
- 2 tbsp olive oil healthy fat, blood sugar friendly
- 2 boiled eggs sliced into halves or quarters, optional for protein boost
- 1 tsp ginger powder optional, helps insulin sensitivity
- ½ tsp turmeric anti-inflammatory, blood sugar regulation
- 1 seasoning cube low-sodium, optional
- ½ tsp salt or to taste
- 1½ cups warm water adjust for smooth paste
- Moi Moi leaves / ramekins / foil for steaming
Instructions
- Blend: Add peeled beans, onion, red bell pepper, carrot, and warm water into a blender. Blend into a smooth batter.
- Mix: Pour batter into a bowl. Add olive oil, crayfish, ginger, turmeric, seasoning cube, and salt. Stir well until fluffy.
- Prepare Wraps/Containers: Line Moi Moi leaves or lightly grease ramekins/foil. Pour in batter, filling only halfway.
- Optional Protein Boost: Add 1–2 slices of boiled egg to each portion before sealing.
- Steam: Arrange in a pot with water at the bottom (use a steaming rack). Cover and steam for 45–60 minutes until firm.
- Serve: Enjoy warm with vegetable salad, pap made with millet, or alone as a light protein-rich meal.
