Diabetic-Friendly Moi Moi with Olive Oil (Blood Sugar Support)
A steamed bean pudding brightened with bell pepper and carrot, made with olive oil and a boiled egg for a protein-rich, low-glycemic bite.

This is moi moi built the way many diabetes-conscious cooks prefer it — steamed, not fried, and finished with olive oil instead of the usual generous pour of palm oil.
Beans are naturally high in both fiber and protein, a combination that helps slow down how the meal's carbohydrates are absorbed, which is exactly why this fits its diabetes tag. Bell pepper and carrot are blended right into the batter for natural sweetness and color rather than added sugar, and a boiled egg tucked into each wrap boosts the protein further. Turmeric and ginger round out the seasoning in the same understated way they show up across this recipe collection — for flavor and warmth, not as medicine.
Steam the wraps low and slow until they're firm all the way through, and let them rest a few minutes before unwrapping so they hold their shape.
