Dairy-Free Carrot Cake with Almond Milk

- 1 1/2 cups grated carrots
- 1 cup all-purpose flour
- 1/2 cup almond milk — unsweetened, dairy-free

- 1/4 cup coconut oil — melted
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda

Instructions
- 1Preheat oven to 350°F (175°C) and grease a baking pan.
- 2In a mixing bowl, whisk almond milk, maple syrup, coconut oil, and vanilla extract.
