Searing the salmon first and building the sauce in the same skillet means the fillets pick up every bit of the garlic butter that follows — this is a one-pan dinner that looks far fancier than the effort it actually takes.

Heavy cream and parmesan turn the pan sauce silky without any flour or thickener, which keeps the whole dish comfortably within a low-carb, keto way of eating. A splash of lemon juice at the end cuts through the richness, and a pinch of red pepper flakes gives it a little background heat if you want it. Spoon extra sauce over the fillets right before serving so nothing goes to waste.

Ingredients

  • 4 fillets salmonskin-on, about 6 oz each
  • 3 tablespoons butterunsalted
  • 4 cloves garlicminced
  • 1 cup heavy creamor coconut cream for dairy-free
  • 1/2 cup chicken brothor vegetable broth
  • 1 teaspoon lemon juicefreshly squeezed
  • 1/4 teaspoon red pepper flakesoptional, for heat
  • 1/4 cup parmesan cheesegrated, optional for extra creaminess
  • 2 tablespoons fresh parsleychopped, for garnish
  • to taste salt and pepper

Instructions

  1. 1Season salmon fillets with salt and pepper on both sides.
  2. 2Heat 1 tablespoon of butter in a large skillet over medium-high heat. Sear salmon fillets skin-side down for 4–5 minutes, then flip and cook another 3–4 minutes until cooked through. Remove and set aside.
  3. 3In the same skillet, add remaining butter and garlic. Sauté for 1 minute until fragrant.
  4. 4Stir in chicken broth, heavy cream, lemon juice, and red pepper flakes. Simmer for 3–4 minutes until slightly thickened.
  5. 5Add parmesan cheese (if using) and stir until melted into the sauce.
  6. 6Return salmon fillets to the skillet and spoon sauce over the top. Simmer for 2 minutes to blend flavors.
  7. 7Garnish with fresh parsley and serve warm.
