Creamy Barley Orzotto with Asparagus and Lemon
A risotto-style barley dish stirred slowly with vegetable broth, finished with asparagus, parmesan, and lemon zest.
This orzotto uses the slow, patient stirring of a classic risotto but swaps in pearl barley for the rice, which gives the finished dish a creamier bite and a real dose of soluble fiber that rice alone wouldn't provide. Asparagus folds in during the last few minutes so it keeps some snap.
A modest two tablespoons of olive oil carries the aromatics, and the parmesan is used more as a seasoning than a heavy topping — just enough to add richness without pushing saturated fat too high. Lemon zest and juice at the end lift the whole dish and keep it tasting bright rather than dense.
Serve it as a light main with a simple green salad, or as a side to grilled fish or chicken. Leftovers loosen up nicely with a splash of warm broth stirred in.
