Jollof rice gets a fiber upgrade here, trading white rice for brown and letting it soak up the same rich tomato-pepper sauce everyone actually loves it for.

Brown rice digests more slowly than white because it keeps its bran and germ intact, which is the main reason this version carries a diabetes tag — the fiber it retains helps make the meal's carbohydrates less of a sharp spike. Turmeric, ginger, and garlic season the sauce instead of leaning on excess salt or sugar, and lean chicken along with carrot and green beans rounds the plate out with protein and extra fiber. It still tastes like the jollof you know, just built on a sturdier base.

Give the rice its full simmer time so it cooks through evenly, and add a splash of water along the way if the pot looks like it's drying out too fast.

Ingredients

  • 2 cups brown ricewashed, soaked 30 mins for softer texture
  • 4 medium fresh tomatoesblended
  • 2 red bell peppersblended
  • 1 medium onion½ blended, ½ sliced
  • 2 tbsp tomato pasteunsweetened
  • 1 –2 fresh chili peppersoptional, for spice if tolerated
  • 2 tbsp olive oil or canola oil
  • 1 tsp turmeric powderblood sugar support
  • 1 tsp gingergrated or powder
  • 1 tsp garlicminced or powder
  • 1 tsp thyme + 1 tsp curry powder
  • 2 cups low-sodium chicken or vegetable broth
  • 200 g lean chicken breastturkey, or grilled fish (protein option)
  • 1 medium carrotdiced, for sweetness without sugar
  • ½ cup green beans or peasoptional, fiber boost
  • ½ tsp saltto taste

Instructions

  1. 1Blend tomatoes, bell peppers, chili, and half onion until smooth.
  2. 2Heat olive oil in a pot, sauté sliced onions until translucent.
  3. 3Add blended mix and tomato paste. Cook on medium heat for 15 minutes until sauce thickens and loses raw taste.
  4. 4Stir in turmeric, ginger, garlic, thyme, and curry powder. Mix well.
  5. 5Add lean protein (chicken/fish), carrot, and green beans. Cook for 5 minutes.
  6. 6Add soaked brown rice, stir to coat in sauce.
  7. 7Pour in broth, season with salt, cover, and cook on low heat for 40–45 minutes (until rice is tender). Add a little water if needed.
  8. 8Once cooked, fluff with fork and serve warm.
