Boiled Rice with Light Vegetable Sauce

Ingredients
- 1 cup white rice — rinsed
- 2 cups water — for boiling rice
- 1 tablespoon olive oil
- 1/2 cup carrot — diced
- 1/2 cup zucchini — diced
- 1/4 cup onion — chopped
- 1 clove garlic — minced
- 1/2 cup low-sodium vegetable broth
- 1/4 teaspoon black pepper — to taste
- 1/4 teaspoon dried herbs — such as basil or oregano
Instructions
- 1Rinse the rice under cold water until the water runs clear.
- 2In a pot, add rice and water. Bring to a boil, then reduce heat and simmer until rice is tender, about 15 minutes.
- 3Meanwhile, heat olive oil in a separate pan over medium heat. Add onion and garlic, sauté until fragrant.
- 4Add carrot and zucchini, cooking until slightly softened.
- 5Pour in vegetable broth, season with black pepper and dried herbs. Simmer for 5–7 minutes until vegetables are tender and sauce thickens slightly.
- 6Fluff the rice with a fork and serve with the light vegetable sauce spooned on top.
