Boiled Plantains with Mild Stew

Boiled plantains served with a mild tomato and bell pepper stew, kept simple and low in spice.

Ingredients

  • 2 ripe plantains peeled
  • 1 cup tomatoes blended or chopped
  • 1/2 cup bell pepper chopped
  • 1/2 cup onion finely chopped
  • 1 teaspoon olive oil for cooking
  • 1/4 teaspoon salt to taste
  • 1/8 teaspoon black pepper freshly ground

Instructions

  1. Place peeled plantains in a large pot, cover with water, and bring to a boil.
  2. Reduce heat and simmer for 10–15 minutes until plantains are tender. Drain and set aside.
  3. Heat olive oil in a pan over medium heat. Sauté onions until translucent.
  4. Add blended tomatoes and chopped bell pepper. Cook for 5–7 minutes until stew thickens.
  5. Season with salt and black pepper. Serve the mild stew over boiled plantains.
