Boiled Plantains with Mild Stew
Boiled plantains served with a mild tomato and bell pepper stew, kept simple and low in spice.
Ingredients
- 2 ripe plantains peeled
- 1 cup tomatoes blended or chopped
- 1/2 cup bell pepper chopped
- 1/2 cup onion finely chopped
- 1 teaspoon olive oil for cooking
- 1/4 teaspoon salt to taste
- 1/8 teaspoon black pepper freshly ground
Instructions
- Place peeled plantains in a large pot, cover with water, and bring to a boil.
- Reduce heat and simmer for 10–15 minutes until plantains are tender. Drain and set aside.
- Heat olive oil in a pan over medium heat. Sauté onions until translucent.
- Add blended tomatoes and chopped bell pepper. Cook for 5–7 minutes until stew thickens.
- Season with salt and black pepper. Serve the mild stew over boiled plantains.
