Boiled Plantain with Fish Pepper Soup (Mild)

Ingredients

  • 4 medium ripe plantains peeled and cut into chunks
  • 500 g fresh fish such as tilapia or catfish, cut into pieces
  • 1 large onion sliced
  • 2 cloves garlic minced
  • 1 tablespoon ginger grated
  • 1 teaspoon mild chili powder adjust to taste
  • 1 teaspoon black pepper
  • to taste salt
  • 5 cups water or fish stock
  • 1 tablespoon fresh parsley or scent leaves chopped, for garnish

Instructions

  1. Peel and cut the plantains into medium chunks. Place in a pot with water and boil until tender, about 15–20 minutes.
  2. In another pot, add the fish, onions, garlic, ginger, chili powder, black pepper, salt, and water or stock.
  3. Bring to a gentle boil and cook until the fish is cooked through, about 10–12 minutes. Avoid over-stirring to keep fish pieces intact.
  4. Drain the plantains and place them into serving bowls.
  5. Ladle the mild fish pepper soup over the plantains.
  6. Garnish with parsley or scent leaves and serve hot.
