Boiled Plantain with Fish Pepper Soup (Mild)

Ingredients
- 4 medium ripe plantains — peeled and cut into chunks
- 500 g fresh fish — such as tilapia or catfish, cut into pieces
- 1 large onion — sliced
- 2 cloves garlic — minced
- 1 tablespoon ginger — grated
- 1 teaspoon mild chili powder — adjust to taste
- 1 teaspoon black pepper
- to taste salt
- 5 cups water or fish stock
- 1 tablespoon fresh parsley or scent leaves — chopped, for garnish
Instructions
- 1Peel and cut the plantains into medium chunks. Place in a pot with water and boil until tender, about 15–20 minutes.
- 2In another pot, add the fish, onions, garlic, ginger, chili powder, black pepper, salt, and water or stock.
- 3Bring to a gentle boil and cook until the fish is cooked through, about 10–12 minutes. Avoid over-stirring to keep fish pieces intact.
- 4Drain the plantains and place them into serving bowls.
- 5Ladle the mild fish pepper soup over the plantains.
- 6Garnish with parsley or scent leaves and serve hot.
