This is a familiar bitterleaf soup rebuilt with a few deliberate swaps — olive oil in place of palm oil, lean cuts of meat, and a light hand with the egusi.

Bitterleaf itself carries almost no carbohydrate, which is part of why this soup is tagged for diabetes: nearly all the substance here comes from protein — lean beef, a little stockfish, and crayfish — rather than starch. Turmeric and ginger are both included in amounts meant to support the soup's overall profile, spices many people managing blood sugar keep in regular rotation, though neither one does the work of a treatment plan. The egusi is used lightly, mostly for a bit of body rather than as a thick, heavy binder.

Wash the bitterleaf thoroughly before adding it, as the recipe notes — this is what tones down its natural bitterness so it settles into the broth rather than dominating it.

Ingredients

  • 2 cups washed bitterleaffresh or frozen, thoroughly washed to reduce bitterness
  • 300 g lean beef or skinless goat meatcut into bite-sized pieces
  • 100 g stockfish or dry fishwashed, deboned, optional for flavor
  • 2 tbsp ground crayfish
  • ½ cup ground melon seedsegusi – optional for thickness, use lightly
  • 1 tbsp olive oil or canola oilinstead of palm oil for healthier fat profile
  • 1 medium onionchopped
  • 1 tsp ground turmericsupports insulin sensitivity
  • ½ tsp ginger powder or fresh gingeranti-inflammatory
  • 2 cups low-sodium chicken/beef broth or water
  • ½ tsp saltor to taste
  • 1 seasoning cubelow sodium, optional
  • Fresh chili or black pepperoptional, mild heat if tolerated

Instructions

  1. 1In a medium pot, add lean beef (or goat meat), onion, ginger, and broth. Simmer until meat is tender (about 20–25 mins).
  2. 2Add stockfish or dry fish, crayfish, and turmeric. Stir well and simmer another 5 mins.
  3. 3If using melon (egusi), mix with little water and add to the pot. Allow to cook and thicken slightly.
  4. 4Add washed bitterleaf and stir. Reduce heat and let it cook for 8–10 mins.
  5. 5Drizzle in olive/canola oil, adjust seasoning, and allow soup to simmer gently for 3–5 mins.
  6. 6Remove from heat and serve warm.
