Bolognese usually leans on ground meat for body, but red lentils break down into a similarly thick, hearty texture as they simmer, and berbere spice gives the tomato sauce a warmth that a standard Italian bolognese wouldn't have. It's a genuinely different sauce, not a meatless stand-in trying to disguise itself.

Lentils and whole wheat pasta both bring a meaningful amount of fiber and protein to the plate without any saturated fat from meat, which is why this dinner is tagged vegan, high-protein, and heart-healthy. The classic mirepoix of onion, carrot, and celery still goes in first, the same way it would for a traditional bolognese.

Give the sauce the full 25-30 minutes it needs to simmer — red lentils cook fast, but the sauce needs that time to thicken and for the berbere to fully bloom into the tomatoes. Finish with fresh basil and, if you're not keeping it strictly vegan, a little Parmesan on top.
