Beetroot has an earthy edge that mellows out completely once it's blended with two whole apples — the color stays bold and deep red, but the flavor turns sweet and easy to drink.

Beetroot is a favorite in smoothies built around anemia support, and the lemon juice here isn't just for taste — vitamin C is known to help the body absorb non-heme iron from plant foods, so pairing the two makes practical sense. Blend everything together, taste for sweetness, and add honey only if the apples aren't doing enough on their own.

Ingredients

  • 1 medium beetrootpeeled and chopped
  • 2 medium applescored and sliced
  • 1 medium carrotpeeled and chopped (optional)
  • 1/2 medium lemonjuiced
  • 1 cup wateror coconut water for extra electrolytes
  • 1 teaspoon honeyoptional, for sweetness

Instructions

  1. 1Place beetroot, apples, carrot (if using), lemon juice, and water into a blender.
  2. 2Blend until smooth and creamy.
  3. 3Taste and add honey if additional sweetness is desired.
  4. 4Pour into glasses and serve immediately for maximum nutrient retention.
