Bibimbap means "mixed rice," and the whole point is the moment you stir everything together: warm rice, seasoned vegetables, marinated beef, and a runny egg, all pulled into one bowl with a swirl of gochujang. Each vegetable is cooked separately and simply, which is more steps than a stir-fry but gives every bite its own distinct texture.

Lean beef sirloin and an egg give this bowl a real protein backbone, useful if you're training or just trying to stay fuller longer, and the spinach and beef together offer a meaningful amount of iron in one meal. The vegetables are barely cooked, so they keep most of their color, crunch, and nutrients intact.

Don't skip crisping the rice a little in the pan if you have a hot stone or cast-iron bowl on hand — it's a small step that makes a big difference to the finished dish.

  • 12 oz beef sirlointhinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil

  • 2 tbsp gochujang
  • 1 tsp rice vinegar

Instructions

  1. 1Toss the sliced beef with soy sauce, sesame oil, and garlic. Let marinate 15 minutes, then sear in a hot skillet 2-3 minutes until just cooked.
  2. 2Season the blanched spinach and bean sprouts each with a small pinch of salt and sesame oil.
  3. 3Sauté the carrot, zucchini, and mushrooms separately in a little oil until just tender-crisp.
  4. 4Fry the eggs sunny-side up in a lightly oiled pan.
  5. 5Whisk the gochujang with rice vinegar and a splash of water to loosen it into a sauce.
  6. 6Divide the rice among bowls and arrange the beef and vegetables on top in sections. Top each bowl with a fried egg, sesame seeds, and a spoonful of gochujang sauce. Stir together before eating.
