Some mornings call for something you can put together before the coffee finishes brewing, and this is one of those. Two slices of whole wheat toast, a ripe avocado mashed with a fork, a little salt and pepper — that's really all it takes.

Avocado is naturally low in acid and brings healthy fat without the greasy heaviness of butter or fried toppings, which is part of why it's often reached for on days when acid reflux is flaring up. Whole wheat bread adds fiber and a mild base that doesn't compete with a sensitive stomach. If citrus tends to be a trigger for you, simply leave out the lemon juice — the toast holds up fine without it.

Ingredients

  • 2 slices whole wheat breadtoasted
  • 1 medium ripe avocadomashed
  • 1/4 teaspoon saltto taste
  • 1/4 teaspoon black pepperto taste
  • 1 teaspoon lemon juiceoptional, prevents browning

Instructions

  1. 1Toast the slices of whole wheat bread until golden and crisp.
  2. 2Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
  3. 3Mash the avocado with a fork and season with salt, pepper, and optional lemon juice.
  4. 4Spread the mashed avocado evenly over the toasted bread slices.
  5. 5Serve immediately as a quick and nutritious snack or breakfast.
