Avocado & Cucumber Salad for Blood Sugar Balance

Diced avocado and cucumber tossed with cherry tomatoes and a light lemon dressing — a crisp, low-carb salad for steady blood sugar.

Ingredients

  • 1 medium ripe avocado peeled, pitted, diced
  • 1 medium cucumber sliced thin or diced
  • ½ small red onion sliced thinly
  • 6 –8 cherry tomatoes halved, optional for color
  • 1 tbsp olive oil healthy fat
  • 1 tbsp lemon or lime juice freshly squeezed
  • ½ tsp flaxseeds or chia seeds optional, for extra fiber & omega-3s
  • 1 pinch salt to taste, preferably sea salt
  • 1 pinch black pepper to taste
  • 1 handful fresh parsley or spinach chopped, optional for garnish

Instructions

  1. Wash and prepare all vegetables (avocado, cucumber, onion, tomatoes, greens).
  2. Dice avocado into medium chunks, slice cucumber, and combine in a mixing bowl.
  3. Add red onion slices and cherry tomatoes.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Pour dressing over the salad and toss gently to avoid mashing the avocado.
  6. Sprinkle flaxseeds/chia seeds on top and garnish with parsley or spinach.
  7. Serve immediately as a light meal or as a side dish.
