Avocado & Cucumber Salad for Blood Sugar Balance
Diced avocado and cucumber tossed with cherry tomatoes and a light lemon dressing — a crisp, low-carb salad for steady blood sugar.
Ingredients
- 1 medium ripe avocado peeled, pitted, diced
- 1 medium cucumber sliced thin or diced
- ½ small red onion sliced thinly
- 6 –8 cherry tomatoes halved, optional for color
- 1 tbsp olive oil healthy fat
- 1 tbsp lemon or lime juice freshly squeezed
- ½ tsp flaxseeds or chia seeds optional, for extra fiber & omega-3s
- 1 pinch salt to taste, preferably sea salt
- 1 pinch black pepper to taste
- 1 handful fresh parsley or spinach chopped, optional for garnish
Instructions
- Wash and prepare all vegetables (avocado, cucumber, onion, tomatoes, greens).
- Dice avocado into medium chunks, slice cucumber, and combine in a mixing bowl.
- Add red onion slices and cherry tomatoes.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over the salad and toss gently to avoid mashing the avocado.
- Sprinkle flaxseeds/chia seeds on top and garnish with parsley or spinach.
- Serve immediately as a light meal or as a side dish.
