This salad doesn't ask for a stove at all — just some dicing, a quick whisked dressing, and a gentle toss so the avocado stays in chunks instead of turning to mush.

Avocado's fat and fiber are the reason this recipe carries its diabetes tag: both slow down digestion in a way that many people managing blood sugar find works in their favor, especially compared to a salad built mostly on starch. Cucumber and cherry tomatoes keep the carb count low while adding crunch and color, and the dressing is nothing more than olive oil, lemon juice, salt, and pepper — no added sugar hiding anywhere. A sprinkle of flax or chia at the end adds a little extra fiber and omega-3s.

Toss everything gently right before serving so the avocado holds its shape, and eat it the same day for the best texture.

Ingredients

  • 1 medium ripe avocadopeeled, pitted, diced
  • 1 medium cucumbersliced thin or diced
  • ½ small red onionsliced thinly
  • 6 –8 cherry tomatoeshalved, optional for color
  • 1 tbsp olive oilhealthy fat
  • 1 tbsp lemon or lime juicefreshly squeezed
  • ½ tsp flaxseeds or chia seedsoptional, for extra fiber & omega-3s
  • 1 pinch saltto taste, preferably sea salt
  • 1 pinch black pepperto taste
  • 1 handful fresh parsley or spinachchopped, optional for garnish

Instructions

  1. 1Wash and prepare all vegetables (avocado, cucumber, onion, tomatoes, greens).
  2. 2Dice avocado into medium chunks, slice cucumber, and combine in a mixing bowl.
  3. 3Add red onion slices and cherry tomatoes.
  4. 4In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. 5Pour dressing over the salad and toss gently to avoid mashing the avocado.
  6. 6Sprinkle flaxseeds/chia seeds on top and garnish with parsley or spinach.
  7. 7Serve immediately as a light meal or as a side dish.
