Açaí Bowl with Banana, Granola and Toasted Coconut
Thick blended açaí topped with sliced banana, crunchy gluten-free granola, toasted coconut flakes, and fresh berries.
Açaí berries from the Amazon rainforest are almost always sold as a frozen puree outside Brazil, and that's exactly what you want for a proper bowl — blended with just a splash of almond milk and half a banana, it turns thick enough to eat with a spoon rather than sip through a straw. That thickness is what makes the toppings work; nothing sinks.
We've kept the toppings simple and textural: crunchy granola, toasted coconut flakes, fresh berries, and a scatter of chia seeds for a little extra fiber. Made with almond milk and gluten-free granola, this bowl is fully plant-based, dairy-free, and gluten-free, and the deep purple berries at its base are naturally rich in the kind of antioxidants often associated with skin and cellular health, so we've flagged it as a nice fit if that's part of what you're going for.
Ingredients
- 2 packets frozen unsweetened açaí puree (3.5 oz each)
- 1 banana, sliced (divided)
- 0.5 cup unsweetened almond milk
- 0.25 cup gluten-free granola
- 2 tbsp toasted coconut flakes
- 0.5 cup fresh mixed berries
- 1 tbsp chia seeds
Most ingredients here are everyday market staples across West Africa. A handful of specialty items may be easiest to find at a local open-air market or an African grocery store if you're elsewhere.
Instructions
- 1Blend the açaí puree, half the sliced banana, and almond milk until thick and smooth (it should be spoonable, not runny).
- 2Divide the blend between two bowls.
- 3Top each bowl with the remaining banana slices, granola, toasted coconut flakes, mixed berries, and chia seeds.
- 4Serve immediately.
